Cauliflower Cilantro Rice

Low prep, easy to assemble and delicious to taste! Get ready for some Cilantro Cauliflower Rice!

This one is quick and easy to make! Especially since you can buy the cauliflower already “riced”. Cilantro Cauliflower Rice is totally up my alley. I am such a big fan of cilantro, I just can’t seem to get enough! I cook with it any time I possibly can, I just love it. I get a bunch of it every time I head to the store, it is such an inexpensive way to add flavor to a dish!

My bestie can’t stand cilantro! He calls it “the Devil’s herb”! 😈 Can you believe??? I guess there is about 10% of the population that doesn’t like cilantro, and I am so glad I don’t fall into that category! Such a great taste to miss out on.

Anyway, ff you can’t find cauliflower riced, you can always buy a head of it and pulse it a few times in a food processor, or you can use a cheese shredder to get the cauliflower riced. Essentially, it is just small pieces of cauliflower that you saute in a pan. This time I made it with Cilantro and just a few other ingredients!

Here is how you do it

In a saute pan, heat up a generous pat of butter and olive oil. I was fortunate enough to use a cilantro and roasted onion flavored one, from a local shop near our Mountain house – the Blue Ridge Olive Oil Company (you can find them an buy online here).

Next, get out your riced cauliflower – mine looked like this:

Dump it all in the pan, once the butter has melted, and add in a good dash of salt, fresh cracked pepper, and about 5 decent shakes of onion powder.

Then, just stir continuously, about 7 to 10 minutes, until it is cooked but still has a little firmness to it. It should look like this when done:

We had it with some crispy skin trout which you can see in the background below… I’ll get to that recipe in another day! This Cauliflower Cilantro Rice is just so easy to make and tastes even better. If you don’t think it is the Devil’s herb, that is. 😉

Cilantro Cauliflower Rice

Servings 3

Ingredients

  1. 1 bag riced cauliflower

  2. 1 bunch cilantro

  3. 2 tbsp butter

  4. 2 tbsp olive oil – a fancy flavor if you have it!

  5. 1 tbsp onion powder

  6. salt and pepper to taste

Instructions


Clean and chop the cilantro.


Heat a saute pan on medium heat and add in the butter and olive oil.


Add the rest of the ingredients to the pan and stir for 7 – 10 minutes until done but not mushy. Add more salt or pepper for your liking. Enjoy!
